Wash the chickpea


Preheat a cast iron skillet in the oven to 425°F

Add oil to the skillet before cooking the chickpea

Step 1

Prep the chickpea with Basmati rice

Slice the onion finely. Garlic should be crushed with a flat knife until it becomes sticky and broken up.

Prep the veggies

Finely mince ginger after peeling it. Slice the green chilli if you wish. Rinse baby spinach and drain it.Take a lemon and zest it and juice it.

Step 3

Cook the chickpea & Spinach

Heat vegetable oil (or coconut oil) in a medium-sized pot over medium high heat.' Adding onions, garlic, ginger, and a pinch of salt will soften the onions, garlic, ginger, and a pinch of salt.

Step 4

Add the Masala, Black Pepper & Green Chilli

Approximately 5 minutes. Add the chickpeas, garam masala, sliced green chillies, and a decent grind of black pepper to the mixture. Then, fry for approximately five minutes. It should be fragrant for 3 minutes.

Add the Coconut Milk

After scraping the bottom clean, water it. After letting it boil, simmer for about 5 minutes. It takes 5 minutes. Next, add coconut milk and season with salt and sugar.

Step 6

Sauted the spinach

Cook, with the lid half on, for approximately 1 hour. Approximately 10 minutes. After cooking time, add lemon zest, followed by juice, to taste.

Stir the baby spinach in after turning off the heat. The spinach should wilt for about ten minutes under the lid. A five-minute time. If desired, add extra green chili on top. You'll love it!
